Similar to our differing working habits, Jared and I approach meal preparation from very different angles. I tend to be über plan-y; I look up recipes, make a menu and head to the store to buy the right ingredients. Jared, on the other hand, is more go-with-the-flow; he searches the pantry and refrigerator for ingredients he thinks would work well together and then invents something on the fly. It’s pretty impressive, really. Sure, there have been a few misses (I can recall a fruit smoothie that I couldn’t quite choke down), but there have also been some mega hits. Those hits, in turn, become Jared signatures.
And because his cooking style often involves getting creative with whatever he can find on hand (some of his best culinary inventions were born from a near-empty kitchen), he’s become pretty efficient with reinventing the leftover. After whipping up a batch of mini apple and Brie quiches for Christmas Eve this year, we had a half a wheel of Brie and a few apples left to use. So on a solo cruise through the kitchen earlier this week, Jared added the quiche-y leftovers to a few pieces of good bread (that were a few days shy of being tossed themselves) and came out with a lunch that was lovely as it was delicious. Check it out:

• Thinly sliced apple (something crispy works best, such as Granny Smith or Honeycrisp)
• Brie cheese (amount depends on your cheesy preference)
• Two slices of good bread
• Splash of olive oil
• Dash of kosher or sea salt
Heat a small skillet over medium heat. Brush one side of bread with olive oil, sprinkle with a dash of salt and place oil side down in pan. Quickly layer Brie and apples and second piece of bread (also brushed on the outside with oil and sprinkled with salt).
Cook until bread turns golden brown, flip and repeat.

Simple, light and a great use of leftover ingredients, don’t you think? And it’s prettiness doesn’t hurt either. You’ve got to love a meal that’s yummy from the outside in.
