Not every food of my affection requires a bunch of preparation or fanfare. Sometimes it’s as easy peasy as slapping together a few ingredients in a haphazard way and noshing on the delicious results. No frills, no tricks. Just things I know I like, stacked together in a way I know I like to eat them.
The sandwich pictured above is the pretty little number that developed from a throw-it-together dinner Jared and I had last week. It hardly warrants sharing a recipe (it is just an elevated twist on the traditional BLT), but in case you’re curious about how we doctored it up, here’s the scoop: sourdough wheat bread (toasted is a must), four strips of bacon (generous but essential), Muenster cheese, fresh baby spinach, Roma tomatoes (thickly sliced) and a light slathering of canola mayonnaise (garlic aioli is a yummy option, too).
It is but a sandwich. But what a sandwich it is.

Have to tell ya- I made your asperagus pasta salad last night and everyone LOVED IT! I barely have enough left over for lunch today. It was so quick (a must in my book) and easy, and most of all MIGHTY TASTY!!! It is now a staple in my book of quick meals– and I can’t wait for lunch today:)
